Baking Fun... Danish Pebernødder!

I love a good opportunity to get in the kitchen and bake up some festive treats. Today our friend Gillian Rose, founder of Danish by Design, has dropped by to share her recipe for traditional Danish Pebernødder {Pepper Nuts}. The recipe is tons of fun to bake with your kids & the resulting biscuits with their spicy ginger and cinnamon flavour have often been described as “little bites of Christmas”.

Pebernødder Pepper Nuts - Danish Biscuits

  • 250g soft butter
  • 250g sugar
  • 100 ml Cream
  • 1.5 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp white pepper
  • 500 g plain flour

Method:

Mix all ingredients and knead until smooth dough. Divide dough into 8 portions. Roll each portion into finger thick sausages and cut each sausage into 1cm pieces. Roll each piece into a ball (the size of a hazelnut).

Place on a baking tray lined with baking paper and bake at 200 degrees Celsius for 10-12 minutes. Makes approx 200 (they will be gone in a flash)
